Recipe: Apple Cranberry Cocktail

I don’t share cocktail recipes often here, but after whipping up this autumnal treat I thought I should share the love around so you can enjoy one too! The best part is this apple cranberry cocktail is quick and easy to whip up and is sure to make everyone’s weekend (or weeknight, I’m not judging!).

Apple Cranberry Cocktail | I Spy Plum Pie

Vodka cranberry used to be my one of my drinks of choice in my early drinking days as it was no where near as sweet as some of the mixed drinks you’d find at the bar, and this feels like a somewhat more grown up version of that. Possibly because I now make them in my apartment kitchen rather than ordering them in a dark bar and drinking them on a dance floor! Good times! Anyway, enough reminiscing, lets make us an apple cranberry cocktail!

Ingredients List

  • 500ml apple juice
  • 500ml cranberry juice
  • 100ml vodka
  • 500ml ginger beer
  • 1/2 cup mint leaves
  • Ice cubes

Steps

  1. Combine the apple juice, cranberry juice and vodka in your blender and mix until light pink and frothy
  2. Pour into a large jug and top with the ginger beer
  3. Roughly tear the mint leaves and split between serving glasses along with ice cubes
  4. Serve immediately and enjoy!

Seriously as easy as that! If you don’t have a large enough blender then do half of each juice and the vodka at once and then pour into your jug to ensure it doesn’t explode out the top of your blender. No one wants a giant mess when it’s cocktail hour!

This recipe makes a good four-five glasses of the cocktail, but it’s easy to make smaller or larger if need be. I’d whip up a fresh batch each time though, you want it to stay nice and frothy and bubbly!
