Welcome to the last Meatless Monday recipe for 2015! I’ll still be popping in occasionally over the next few weeks but won’t get back into the full swing of things until early Jan. I’ll still be hanging out on facebook & instagram though!
With the weather getting warmer it was time to restock my freezer with icy poles! I wanted some healthy options on hand for a post-dinner treat or even a cooling breakfast option and these blueberry yogurt icy poles really hit the spot! They are super easy to whip up, deliciously tasty and are guaranteed to put a smile on your face!
Ingredients List
- 2.5 cups of blueberries
- 1tbs honey or agave syrup
- 2 cups greek yoghurt
Steps
- Blitz the blueberries in your blender until broken down, but still a little chunky
- Pour into a bowl and stir through the honey or agave syrup
- Pour in the greek yoghurt and gently stir to create a marbled look
- Taste and add more sweetener if need be
- Pour into your icy pole containers and freeze overnight
- Enjoy!
How easy is that! You can use fresh or frozen blueberries – I have made them with both – but if you use frozen ones you might need to add some liquid to help blitz them depending on the strength of your blender. I added a splash or two of coconut water to help mine along which worked perfectly.
Given these blueberry yoghurt icy poles are healthy and delicious there’s no reason not to have them in your freezer! I guarantee they won’t last long either!
