It’s that time of year again where I spend my Sunday afternoon whipping up soup for the week ahead. This Tuscan Vegetable soup is an absolute winner – hearty, warming and oh so tasty. Plus, it gets better over the next few days so it’s perfect for leftovers. It freezes well too, so it’s winning on all fronts!

I love soup for lunch when the weather gets cooler, but I always found it an annoying thing to take to work to reheat. Given I’m still working from home a bit it’s the perfect time to add more soup to my rotation and this roasted capsicum and fennel soup is delicious. Packed with flavour but super simple to make!
