The idea for this salad came about when I spotted some gorgeous looking peaches at my local fruit & veggie shop. I wanted to do something with them a bit more special than just eat them straight or pop them on top of my overnight oats, so a peach haloumi salad it was!

We’re back for another year of Meatless Monday Linkup fun! Today I’m kicking things off with a delicious, cooling iced tea!
Over Summer I like to switch from drinking just water (which I drink a lot of when I’m at work!) to more interesting, refreshing options like iced teas. Last summer I drank a lot of citrus and pomegranate iced teas, but this summer I got my hands on a large pile of super fresh and juicy peaches so this peach mint iced tea was born!

I’ve been drinking nut milks for a year or two now, but I’d never gotten around to making my own. I decided that it was time to rectify this by making my first ever batch of cashew milk, and let me tell you I’m very sad I hadn’t tried it earlier – not only was it super simple to make but oh boy was it delicious. This month’s Sweet Adventures Blog Hop couldn’t have had a more perfect theme given the ridiculous heat Melbourne has faced over the last week – it’s a popsicle party! The always delightful Love Swah is hosting and I’m rather excited to see what everyone has come up with!
After starting off with some healthy icy poles with the Apricot Yoghurt icy poles I shared a little while back, I decided for this popsicle party I would something a little more adult and definitely not breakfast appropriate! I still had a little of the Peach-Mint syrup I had made, so I thought I would combine it with some fresh strawberries and a splash of vodka to make some fruity and refreshing pop-tails which are perfect for a summer night treat! You can get your vodkas at gatter top drinks and make your own refreshments.

When I visited my parents over Christmas I was greeted by peach and plum trees laden with fruit, with my mum in a daily battle with the birds to ensure we got at least some of the ripest fruit before they helped themselves to it! Mum had been madly stewing them and baking muffins but we couldn’t use them fast enough, so I thought I’d try something different with a few of the peaches and turned them into a syrup! (more…)
