At this time of year having some quick and delicious snack options in your repertoire becomes even more important than usual. These cauliflower cashew pasties absolutely hit the mark, and are perfect for lunch, picnics or serving with drinks. Ready in no time as well!

Ingredients List
- 1/2 cauliflower
- 2tbs olive oil
- 1/3 cup raw cashews
- 1.5tsp cumin
- 1.5tsp curry powder
- 1tsp brown mustard seeds
- 1/4 cup currants
- One lemon
- 2-3 puff pastry sheets (defrosted)
- 150g paneer
- Curry leaves (optional)
Steps
- Preheat oven to 200C
- Slice the cauliflower into roughly 1cm pieces
- Steam for 3-4 minutes until tender
- Place in a bowl and combine with the oil, cashews, spices and currants
- Add the zest and juice of the lemon and toss well to combine, season well
- Cut the pastry sheets into quarters and place on a lined baking tray. Prick with a fork, leaving a 1cm border
- Spoon the cauliflower mixture into the middle of the pastry
- Slice the paneer and add to the top of the cauliflower mixture
- Bake for 15 minutes, or until puffed and golden
- Serve with fried curry leaves on top

You can even make the cauliflower mix ahead of time and just assemble them and pop them in the oven when you need to serve them. I love the burst of sweetness the currants give to these cauliflower cashew pasties. The addition of the paneer makes these a bit more substantial than just a veggie-based pastie, so they make a great lunch served with some salad as well. Delicious!
