Sometimes all I want for dinner is a creamy pasta dish, but I tend to avoid dairy for the most part, and it’s not exactly the sort of meal you should eat too often anyway! Luckily, this avocado & spinach pasta dish fills that void, bringing all the deliciousness of a rich, creamy sauce and all in just as long as it takes for the pasta to cook!

Risotto is one of those meals I don’t make often enough, but when I do I always love it. I needed a break from all the curries I have been eating lately to stay warm and this seemed like the perfect time to whip up a new risotto dish, and mushroom & spinach risotto it was!

I’ve long been a fan of Mexican food, it’s normally quick and easy to whip up, relatively healthy (okay, maybe not with this much cheese!) and super tasty. These baked corn & black bean quesadillas are no exception, and you can have them on the table in under 20 minutes which makes them an excellent lunch or quick dinner option. You can also use the best quesadilla maker, to have it cook a little faster.

So I got some pretty exciting news on the weekend (which if you follow I Spy Plum Pie on facebook or instagram you may have already seen!) – this little slice of the internet was announced a finalist in the Kidspot Voices of 2015 competition, in the Home & Wellbeing category. Recipe: Potato and Pea Curry
My love of making curries is fairly well documented around these parts, but for good reason! They are warming, delicious, easy to make and freeze well – what more could you want?! This potato and pea curry is about as simple as they come, but I don’t see that as a bad thing at all. Instead, the two veggies get to star in a creamy, flavour packed sauce, and you don’t have to worry about prepping a million different ingredients!
